Ringing in the weekend with frozen margaritas

SLUSHIES FOR ADULTS. That’s essentially all I need to say. If, like me, you’re pretty resolutely against serving food at parties (“This isn’t Peep Show Mum!”) or even shelling out a good few day’s pay to watch your friends get plastered, frozen margaritas are for you.

Instruct all guests to either bring silver tequila or Triple Sec, and all you need to be concerned about are limes, lemons, sugar and water. Pretty basic, but only you need to know that.

To tszuj these up a bit, place the glasses you plan to use in the freezer before you start making them, and they’ll go just the right opacity to make the slushie mix look a bit more grown-up (I know, I know, who am I kidding, this is straight out of a Sleigh Bells video, but I’m still going to appear to aim for something a little more refined).

– I’ve listed the ingredients in cup form so this is easy to scale up or down (yeah, sure) and measure out without having to track down any extra equipment, but you will need a food blender to make these extra-slushie like, or a hand blender will also do the trick if the ice is already broken up.

Frozen lime margaritas

Makes three cocktails

2 tbsp caster sugar

Juice of four limes

1/2 cup silver tequila

1/4 cup Triple Sec or Cointreau

3 cups of ice

Once your glasses are in the freezer, heat the caster sugar in a pan with 2 tbsp of water, until the sugar totally dissolves and you have a syrup. In the blender, add the syrup, limes, tequila, Triple Sec and ice, and blend until totally smooth. Pour into the chilled glasses, add a straw and you, my friend, are good to go.
